Rhubard crumble

Rhubarb lemon marmalade

Ingredients:

  • 500g rhubarb, washed and chopped
  • 100g caster sugar
  • 150g plain flour
  • 100g unsalted butter, cubed
  • 50g demerara sugar

Instructions:

  1. Preheat oven to 180°C.
  2. Toss the rhubarb with caster sugar and place it in a baking dish.
  3. In a bowl, rub the butter into the flour to form breadcrumbs. Stir in the demerara sugar.
  4. Spread the crumble mix over the rhubarb.
  5. Bake for 30–35 minutes until the top is golden and the rhubarb is bubbling. Serve with custard or cream.
