Ingredients:
- 500g rhubarb, washed and chopped
- 100g caster sugar
- 150g plain flour
- 100g unsalted butter, cubed
- 50g demerara sugar
Instructions:
- Preheat oven to 180°C.
- Toss the rhubarb with caster sugar and place it in a baking dish.
- In a bowl, rub the butter into the flour to form breadcrumbs. Stir in the demerara sugar.
- Spread the crumble mix over the rhubarb.
- Bake for 30–35 minutes until the top is golden and the rhubarb is bubbling. Serve with custard or cream.
